Traditional Japanese & Macrobiotic Chef

I specialize in traditional Japanese cooking and Macrobiotic cuisine. The traditional Japanese diet centers around real whole foods like brown rice, miso soup, root vegetables, sea vegetables, and fresh fish. The Japanese traditional diet is rooted in elegant simplicity, spiritual balance, and harmony with nature.   

Macrobiotics is as much as way of cooking as it is a life-changing way to think about food. Macrobiotic cooking emphasizes vegetables, whole grains, seasonal foods, and the balancing of energies intrinsic to different foods. Macrobiotic philosophy helps us to tune into the ever-changing nature of our minds and bodies, our environment, so we can find balance and harmony.  

Vegetarian & Vegan

Although I am not strictly vegetarian or vegan, the vast majority of my recipes avoid the use of all animal products. I teach how to replace dairy products with more healthy options but still receive the same satisfying results. I use organic produce and other ingredients whenever possible.   

My cooking classes incorporate a wide range of culinary influences. I am originally from Japan, and Japanese cooking techniques and other ways to enhance flavors play strongly into how I cook. Traditionally, Japanese people hardly ever ate meat due to the influence of Buddhism. Therefore, Japanese cooking has a long tradition of letting the natural deliciousness of seasonal vegetables shine. I am always infusing this approach into my cooking and classes alike.

I often use elements of various ethnic cuisines like Italian, French, Mediterranean, Indian, Chinese, and Korean to prepare meals that are exciting to the palette but also find a soothing and nourishing energetic balance. I always aim to prepare meals that are full of flavor, healthy, and balanced.
